Rotisserie-Style Chicken in the Crock Pot

1 Whole chicken (4-5 pound)
2 teaspoons kosher salt
1 teaspoon paprika
1 teaspoon onion powder
½ teaspoon dried thyme
1 teaspoon Italian seasoning
1 teaspoon black pepper
1/2 teaspoon chili powder
4 whole garlic cloves
1 vidalia (or other yellow) onion peeled and quartered
2 or 3 good size fresh tators
2 stalks celery (rough chopped)
Pan spray

If preferred, skin the chicken (a lot of folks just don’t like it)
Combine all spices in a bowl

Remove all giblets
Rub spices all over and inside chicken
Place quartered onion and garlic cloves inside the bird

Lightly spray the bottom of the crock pot with pan spray
Place tators and celery on the bottom of the crock pot and place the chicken – breast side down – on top of the fresh vegy’s

Cover and cook on high 4 or 5 hours or on low for 8
Do Not Peek!! This lets out the moisture that is keeping your bird tender and juicy ..
